1/2 cup chopped onion

2 cloves garlic

1 tablespoon vegetable oil

1/2 cup chopped carrots (apples or pineapple)

1/2 fresh chopped Habanero pepper

1/2 cup distilled vinegar

1/4 cup lime juice

Saute' 1/2 cup chopped onion and 2 cloves garlic in 1 tablespoon vegetable oil.  Add 1/2 cup chopped carrots with a small amount of water.  Bring to a boil, reduce the heat and simmer until the carrots are soft.  (Apples & pineapple can also be used.)  Place this mixture and 1/2 fresh chopped Habanero pepper in a blender and puree the mixture until smooth.  Combine the puree with 1/2 cup distilled vinegar and 1/4 cup lime juice (preservatives) and simmer for 5 minutes to combine flavors.  Strain the mixture into steriliized bottles and seal.  Yields 2 cups.
